A colorful, nutritious, easy to make Summer Salad that is a POWERFUL PROTECTOR!

Cruciferous vegetables are an exceptional family of phytochemicals—nutrient rich vegetables named for their cross-shaped flowers.

Cruciferous vegetables, such as the cabbage family are touted for their powerful healing compounds that exhibit cancer-fighting activity, particularly against lung, colon, stomach and breast cancers.

This food group can help allergy suffers with mucus build-up, colds, sinus problems. A great source of chromium, these veggies can also regulate insulin and blood sugar levels. This means it's an Anti-Fat Nutrient. Cooking can destroy some of the Anti-oxidants, so do eat it raw as shown in my recipe.

Low-Fat Summer Veggie Cabbage
One small head of white cabbage, shredded
2 med. carrots grated
1/2 bunch of radishes, sliced thin
4 scallions, white & green part, sliced
3 Tablespoons of fresh Chives, chopped
1/2 yellow and red pepper, chopped small
Pinch of sea salt and pepper
1/2 cup of a non-dairy mayo like Veganese or Nasoya fat-free
1 Tablespoon lemon juice, fresh
1-2 Tablespoons of Apple Cider Vinegar
2 teaspoons of Dill ,dried
1 teaspoon of Paprika

Procedure:
Prep all veggies; mix wet ingredients together with a wire whisk well and add to the vegetables.
Serves 4-6, ENJOY!
